Croque Monsieur (Or as Hogan would call it, a ham and cheese sandwich.)
Salad Niçoise (To Hogan, a nice salad.)
Tartiflette avec les lardons et les truffe noires (Potato casserole with bacon, cheese and mushrooms)
Clafoutis des poires (Pear custard)
Blanquette de veau (Veal stew)
Bisque de tomates et citrouille (Tomato and pumpkin soup)
Coq au vin (Chicken in wine)
Brie gougères (Cheese puffs)
Moules à la crème Normande (Mussels with cream)
Of course, Hogan has his own favorites. Here are two from my own recipe collection.
1 and ½ pounds ground beef
1 white onion, chopped
1 cup taco sauce
1 cup coarsely crushed tortilla chips
1 packet taco seasoning
1/2 cup shredded Mexican blend cheese
Salsa for topping
Mix together all ingredients except salsa. Form into a loaf and bake at 350 degrees for one hour. Before serving, spoon salsa over the top. Serve more salsa and taco sauce on the side to spoon over at will.
Chicken Pot Pie
¼ cup butter
½ cup diced onion
5 cloves minced garlic
½ cup diced carrots
½ cup diced celery
½ cup frozen corn
½ cup frozen peas
3 cups shredded cooked chicken
¼ cup flour
1 cup chicken broth (to start--you might have to add more)
1 tablespoon turmeric
1 teaspoon cardamom
Salt and pepper to taste
3 sprigs chopped fresh thyme
¼ cup half-and-half
2 unbaked pie crusts
Preheat oven to 375. Line a baking dish with one of the pie crusts.
Melt butter over medium-high heat. Add onion, garlic, carrots, and celery and stir until the onions turn translucent. Add chicken, flour, and spices and stir until combined. Add chicken broth, then cook until thickened.
Add the thyme, peas, and half-and-half, then stir until it's bubbly and thick. If it gets too thick, stir in a little more broth.
Pour the filling into the crust-lined baking dish. On the second crust, use a knife to cut little vents, then place it over the top of the pie.
Place on a rimmed baking sheet and bake for 25 to 30 minutes, until the crust is deep golden brown.
